Here’s a terrific recipe for cranberry relish that I found on the Food Network. Why is it so terrific…all the ingredients are readily available at any Carmel Valley San Diego community grocery store, its VERY simple and quick to prepare and most important it tastes great.
It’s a wonderful alternative to the canned jellied or chunky processed stuff so many people are accustomed to and the total cost for the ingredients is about $5. So give it a try, we know you’ll like it. And best wishes for a happy, healthy and safe Thanksgiving to all our CV neighbors.
1 pound fresh cranberries (4 cups)
1 ½ cups sugar
1 cup water
1 whole orange, unpeeled, seeds removed and chopped fine
¼ teaspoon ground cloves
½ cup crushed pineapple
½ cup chopped walnuts
¼ teaspoon ground cinnamon
Wash berries and set aside. Bring sugar and water to a boil in a nonreactive sauce pan. Add cranberries, chopped orange and clove. Simmer over a high flame until berries pop open. Add crushed pineapple, walnuts and cinnamon and stir to blend. Cool and serve.
Yield about 6 cups…relish freezes very well and will last up to 9 months in the freezer
