Pasadena-based coffee roaster and fast-casual brunch leader Copa Vida is
opening its 6th café on Saturday, April 6th in Carmel Valley, San Diego. Grand
Opening celebrations will be held from 5pm~9pm on April 5th.
The café will feature Copa Vida’s fresh-roasted coffee, a variety of prized teas
prepared to order, cold brew on tap, and a thriving rotation of specialty
drinks. Copa’s brunch menu, designed by Executive Chef Taylor Martin-Funk,
sports year-round classics like croque madame, chorizo egg hash, and
chilaquiles, as well as seasonal plates such as shaved asparagus salad, shishito
romesco avocado toast, and smoked salmon toast with pickled spaghetti
squash.
The 2,300 square-foot space is located in the modern, breezy Merge Carmel
Valley center at the corner of Carmel Mountain and Carmel Country roads.
Designed to be a community hub, the café is a bright, comfy mix of classic
and modern, and offers a variety of space and nooks to settle into. Generous
seating is available on the patio, which is surrounded by lush foliage and an
herb garden. Local cyclists will appreciate the long bike rack and
maintenance station supplied with an array of tools and an air pump right
outside the café doors.

Since opening it’s first location in 2013, Copa Vida has been a frequent
member of the Top Ten lists in both San Diego and Los Angeles food and
culture publications (Eater, Thrillist, Fodor’s, etc.). Copa Vida roasts craft
coffee in small batches at its roastery in Pasadena, and operates cafes in
Pasadena, Carlsbad, Sorrento Valley, and in East Village and the Marina
district in downtown San Diego.
