Low Fat/Calorie Quiche for Summer Brunch

One of my and Mike’s favorite Saturday morning times together is at Champagne French Bakery in Encinitas.  We LOVE their fruit crepes and Quiche Lorraine.  And although the quiche is actually high in protein and good for you in many ways, it is also very high in calories and fat!

So, here’s my tips for making a healthier, lower calorie Quiche Lorraine:

  1. Trade out ham or bacon for Canadian Bacon.
  2. Use low fat or fat free evaporated milk in place of cream.
  3. Use a number of egg whites in place of full eggs.
  4. Consider some feta and/or low fat swiss in place of cheddar or full fat swiss.

Ingredients:

  • 3 large eggs
  • 3 large egg whites
  • 1 12 oz can of fat free evaporated milk
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 2 pieces of chopped canadian bacon
  • 1/4 cup low fat swiss
  • 1/4 cup feta
  • 4 sliced green onions
  • 1 frozen pie shell

Preparation:

Preheat oven to 375.  In a large bowl, whisk the eggs and egg whites together.  Add in evaporated milk, salt, and cayenne pepper and whisk again.  Add in bacon, cheese and green onions.  Pour the batter into the frozen pie shell.

Bake the quiche for about 45-50 minutes of until the center is slightly soft and puffy (should still be moist as it will continue to set).  Cool for about 10-15 minutes and serve warm.  Serves eight.  Should cut your calories in about half – from almost 650 calories per slice to about 300 calories per slice.
