Favorite Quick Dinner – in Five Minutes or Less!

At Fit in 60 Pilates and Barre, we feel very strongly that in order to achieve your health and weight loss goals, both fitness and nutrition must be incorporated.

So often, clients come in and tell me they are taking four classes a week, but leave class and eat whatever they like – which often includes a ton of processed food.  Yes, weight loss is calories in and calories out, but it is also much about the quality of the food eaten.

As a busy professional, I find that I do a lot of carry out food.  A few of my absolute favorites in Carmel Valley are Rimel’s and Urban Plates because I can order really healthy options.  I also am a HUGE fan of the deli case at Jimbo’s.  And I can not be MORE excited about the new additions of Be Beaming and Whole Foods.

But if you are looking for a healthy, QUICK meal – often more quick than take out – here you go with one of my favorites.  This meal is high in protein, anti oxidants, and inflammation fighting nutrients.  It can literally be done in less than five minutes.

Heat a sautee pan over high heat and spray with olive oil.  Season one salmon fillet with sea salt and place in the hot oil – skin side down.  Sear on one side about one and a half minutes.  Flip over and sear the other side – about a half a minute.  Add in a cup of each halved grape tomatoes and zucchini.  Drizzle with balsamic vinegar and sautee all about a minute and place all on a plate.  Drizzle with balsamic vinegar and serve with quinoa, steamed vegetables, etc.
